Step 1 : the Harvest
The people are sent with their big basket in the different locations of the coffee field from 6 am to 1:30 pm to pick only the red seeds. Hidden by the rich green leaves, they will take some resting time
Step 2 : Measuring the collected seeds
Around 1 pm, a big trailer comes close to the fields to collect the seeds. The square recipient is a defined measure “cup” which corresponds to a specific amount of money given to the people at the end of each week
Everyone is attending this time helping each other still is very friendly atmosphere
Step 3 : the Pulping and Drying
In the case of wet process coffee, hulling removes the dried husk surrounding the coffee bean (including the the exocarp, mesocarp and endocarp/parchment)
They then remove the red pulp to extract the coffee bean.
The coffee is then spread to be dried.
Coffee will be cooked / roasted later.
